I made this today with intentions of having leftovers for my husband and myself for lunch tomorrow...it was so good that there was none left! I had to sprinkle dried parsley since I didn't have fresh and I skipped the lemon zest so it wouldn't be overly lemony. I will definitely make this super quick and easy meal again :)

If you love pineapple or cake
This recipe from Pinterest is fat free and you would never know. It is one of the best cakes I've ever had and takes virtually no time to make!

This was taken straight from Pinterest. My daughter and I love it and it's pretty filling. I use my Magic Bullet for the single serve recipe...cleanup is a breeze :)

People are always requesting that I make this. I usually reduce vodka to 1/2 cup since it's a little too strong. This recipe does take a while to make. I advise reducing the heavy cream first and then preparing the rest of the ingredients as it's reducing. Also, make sure your flame isn't too high when you are reducing the cream, otherwise it'll spill over and make a huge mess.

I made this tonight and it was amazing. The sauce is not too thick, not oily, and not overly lemony. I served it with spaghetti. I would use less parsley next time. To keep with the theme I made lemon bars for dessert (from the box though).

I have always had a passion for cooking and baking, but over the past couple of years I have started to become frustrated when it comes to food for several reasons.
Firstly, I can never think of what to make, so for a while, I was making the same foods over and over again and getting bored very quickly.
Secondly, I would spend an hour in the supermarket, two hours making a new recipe, and was then disappointed by the meal.
Lastly, every time we go out to eat it seems that the prices get more and more expensive, and the taste and quality of the food seems to be getting worse.
Then, several months ago, my prayers were answered....I became hooked on Pinterest! I now had a place that had delicious, healthy recipes that I could make for my family. Although I'm hooked on Pinterest, I occassionally go back to Foodnetwork.com for some good recipes, and have collected several over the years.
So here they are....ENJOY!
